Muffins that are no longer ‘cakes in disguise’
If January is the month to make resolutions then February must be the month to break them. But before you reach for that second glazed donut, stop, take 15 mins out of your day & bake these scrummy muffins, which will have less of the fat, sugar & guilt of that sloppy donut.
I love taking typically unhealthy recipes & making them as healthy as I can, but this can take a lot of time & a lot of experimentation. I have had this recipe for years now, tweaking it until it was perfect & ready to share with you.
The best part is this recipe is it’s easily customisable. I have added chopped nuts, coconut, apple, cherries, sultanas & even some dark chocolate chips in the past & they still come out amazeballs.
Flourless Orange Cake

A trip to Nan & Pop’s farm means one thing…oranges! There are so many orange farms around the area that each visit means I am coming come with at least two giant garbage bags full of the stuff. I am then left with the difficult task of finding ways to sneak oranges into every meal to make sure we eat them all before they go bad.
And that’s how this sweet, moist, citrusy cake happened… & now that we have had it once, it will definitely happen again.
Check out the recipe here. I followed all of the steps, but instead of adding a cup of sugar I added half. This was a good move as for me, the syrup on top was sweet enough.
Also, I covered the top with foil, the recipe doesn’t ask to do this but my oven has a tendency to burn the tops off my cakes.
This cake would be prefect to take to work/school/dinner party as it is gluten-free & more importantly, it’s delicious!

Butterfly Cakes
It is easy to get swept up in the latest craze in sweet treats, the blogosphere has introduced me to the likes of cake-pops, cakes baked in jars, cakes baked in teacups, {take a look at some on my pinterest}, red velvet cupcakes, hummingbird cupcakes & cupcakes that you can set alight! While these new & exciting creations can be fun to make, sometimes I just crave one of my tried-and-tested, childhood favourites, the humble Butterfly Cake.

As thankyou/christmas gifts I made little gift boxes full of Christmassy treats.
First up I baked some gingerbread biscuits using this recipe & as I am someone who is well known for her failed attempts at biscuits, these turned out excellent!
